Green tea is as good to eat as it is to drink

Here's a recipe for a chicken dish that contains green tea. There are dozens more recipes in Cooking with Green Tea.

Grilled Teriyaki Chicken

Ingredients:

Four skinless, boneless chicken breast halves

Marinade:

1 tablespoon fish sauce

1 tablespoon rice vinegar

1/8 teaspoon white pepper

4 teaspoons cornstarch

1 tablespoon minced garlic

1 tablespoon minced fresh orange zest

2 green onions (green and white parts), minced

Prepare the sauce

Combine the following:

½ cup brewed green tea

1 teaspoon honey

1 teaspoon lemon juice

Make the marinade

Mix fish sauce, vinegar, and pepper in a medium bowl. Dissolve corn starch in the vinegar mixture. Stir in garlic, orange zest, and green onions. Toss the chicken with the marinade. Cover and refrigerate for two hours.

Cook the chicken

Remove the chicken from the marinade, reserving liquid. Preheat grill. Place chicken on grill and cook for eight to 10 minutes. Turn and brush with reserved marinade. Grill eight to 10 minutes or until tender and meat is no longer pink in the center.

Make the sauce

Combine all sauce ingredients in a small bowl. Serve as a dipping sauce with the chicken.

Makes four servings.
